It's about adapting Loire Valley reds to the 21st century market whilst keeping the classic, fresh and fruity Cabernet Franc qualities.</p> <p> Project Cabernet Franc started in 2005 when Harrop was asked by InterLoire to work with Loire producers and advise on how to make Loire Cabernet Franc more export-friendly. He worked with the InterLoire technical team and together they came up with a comprehensive  wine-making protocol' which optimises fruit-driven styles without compromising on terroir. The Protocol advocates picking before 11am so making the most of the cool of the day; avoiding spontaneous fermentation; only using oak if the fruit it sufficiently ripe; plus other techniques to ensure that, even in difficult years, Loire Cabernet Franc will produce wines which are fruity, fresh and well-structured.</p> <p> Sam isn't telling us how to make wine in the Loire Valley, after all we've been doing it for centuries, but he does have some good ideas and we're getting some great results.<br /> Jean-Max Manceau, President of the Wines of Chinon AOC Association </p> <p> The enthusiasm on the ground from producers is really exciting. This is a project that has captured the imagination of Loire winemakers, and one which I believe has sound commercial objectives. It is about implementing good viticultural and vinification practices, forging more links with the UK trade and building on existing markets. Importantly it is also about reaching out to the consumer, not only giving them what they know they want, but perhaps something they hadn't anticipated as well.
